Cake Mix Cookies

This is one of my favorite go-to recipes when I’m in a hurry and need something good! These are quick, easy, and taste so good that people are amazed when they learn how they’re made. Here’s how to make them…

  • Box of cake mix (yellow or chocolate)
  • 1 egg
  • 1/3 cup cooking oil
  • 1/8 cup water
  • 1 cup miniature chocolate chips
  • 1/2 cup chopped pecans

In a mixing bowl, pour dry cake mix. Pour in oil, water, and egg. Mix well to form a soft dough that cleans the bowl. If dough is too dry, add a little  more water. (I sometimes use up to 1/4 cup.)

Add in the chocolate chips and pecans and stir until well-mixed.

Place scoopfuls of dough on an ungreased cookie sheet.

Bake at 350 degrees for 9-11 minutes or until a very light golden brown. Let cool on cookie sheets for about 10 minutes then remove to cooling racks to cool completely.  Yield: About 2 1/2 dozen

Mmmm! Do you have a tall, cold glass of milk ready?

This recipe is great not just because of ease and taste but also of versatility. You can use a lemon cake mix, substitute lemon juice for the water, leave out the chips and nuts, and dust lightly with powdered sugar when cooled. You can use a red velvet cake mix, again leaving out the chips and nuts, and frost with cream cheese frosting. For the holidays, substitute red and green holiday M&M’s in place of the chips. You can use any flavor cake mix, add-ins and frosting options you want. I’ve used all of these variations and more and they are all good!
